  • 4 bone-in pork chops (about 1 inch thick, 8 ounces each)
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Place a wire rack on a rimmed baking sheet.
  2. In a small bowl, combine 4 tablespoons softened butter, 3 minced garlic cloves, 2 tablespoons parsley, 1 teaspoon thyme, ½ teaspoon salt, and ¼ teaspoon pepper. Mash with a fork until evenly mixed. Set aside at room temperature.
  3. Pat 4 bone-in pork chops dry with paper towels. Season both sides with ½ teaspoon salt and ¼ teaspoon black pepper. Let sit for 10 minutes.
  4. In a shallow dish, combine 1 cup panko, ½ cup Parmesan, 1 teaspoon smoked paprika, ½ teaspoon garlic powder, ½ teaspoon onion powder, and remaining ½ teaspoon salt. Stir to mix.
  5. Brush each pork chop with ½ tablespoon olive oil on both sides. Press each chop into the breadcrumb mixture, coating all sides evenly. Place coated chops on the wire rack.
  6. Bake for 20 minutes without flipping.
  7. Remove pan from oven. Brush garlic herb butter generously over the top of each chop. Reserve about 1 tablespoon for later.
  8. Return to oven and bake for another 5-8 minutes, until internal temperature reaches 145°F (63°C) when measured with an instant-read thermometer inserted into the thickest part, avoiding the bone.
  9. Remove from oven and let rest on the wire rack for 5 minutes. Brush with remaining garlic herb butter just before serving.
