  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 375°F (190°C). Line your muffin tin with paper liners or grease it well.
  2. Make the streusel topping: In a small bowl, whisk together the flour, brown sugar, cinnamon, and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until crumbly with pea-sized butter pieces. Set aside in the fridge.
  3. Whisk the dry ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  4. Mix the wet ingredients: In a separate medium bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, oil, eggs, vanilla extract, and milk until smooth.
  5. Combine wet and dry: Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold together gently until just combined (a few streaks of flour are fine).
  6. Fill the muffin cups: Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full.
  7. Add the streusel: Sprinkle the chilled streusel topping generously over each muffin, pressing down slightly so it sticks.
  8. Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Cool: Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients and chill the streusel before adding. Do not overmix the batter. Store in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months.
