Ingredients

Scale
  • 3 to 4 pounds beef chuck roast, trimmed of excess fat
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 large onion, sliced thin
  • 2 cups beef broth (low-sodium preferred)
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh rosemary or 1 teaspoon dried rosemary
  • 2 sprigs fresh thyme or 1 teaspoon dried thyme
  • 3 pounds Yukon Gold potatoes, peeled and quartered
  • 4 cloves garlic, peeled and left whole
  • 1/2 cup whole milk or heavy cream
  • 4 tablespoons unsalted butter, softened
  • Salt and freshly ground black pepper to taste
  • Chopped fresh chives or parsley for garnish (optional)

Instructions

  1. Pat the chuck roast dry and season generously with kosher salt and black pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat and sear the roast for 4 to 5 minutes per side until well browned. Transfer to crockpot.
  3. In the same skillet, sauté minced garlic and sliced onion for 3 to 4 minutes until softened and fragrant. Pour over the roast in the crockpot.
  4. Add beef broth, Worcestershire sauce, rosemary, and thyme to the crockpot. Cover and cook on low for 8 to 10 hours.
  5. About 45 minutes before the roast is done, boil peeled, quartered Yukon Gold potatoes and whole garlic cloves in salted water until fork-tender, about 20 to 25 minutes.
  6. Drain potatoes and garlic. Remove garlic cloves and mash separately, then stir mashed garlic back into potatoes. Add butter and warm milk or cream gradually, mashing until creamy. Season with salt and pepper.
  7. When the roast is done, remove herbs and shred meat with two forks. Serve shredded beef with garlic mashed potatoes, spooning some cooking liquid over the meat.

Notes

Searing the roast before slow cooking adds flavor and seals in juices. Resist lifting the crockpot lid during cooking to maintain temperature. Let the roast rest 10 minutes before shredding to keep it juicy. Yukon Gold potatoes provide creamy texture for mashed potatoes. For gluten-free, ensure Worcestershire sauce is gluten-free or substitute with coconut aminos. Dairy-free mashed potatoes can be made using dairy-free butter and milk alternatives.
