  • 4 cups thinly sliced zucchini (about 2 medium zucchinis)
  • 1 cup thinly sliced yellow onion
  • 1 tablespoon salt
  • 2 cups granulated sugar
  • 2 cups apple cider vinegar
  • 2 tablespoons yellow mustard seeds
  • 1 tablespoon celery seeds
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground ginger (optional)

Instructions

  1. Slice the zucchini and onions thinly using a mandoline or sharp knife for consistent thickness.
  2. Place sliced zucchini and onions in a large bowl of ice water with 1 tablespoon salt. Let sit for 1 hour to keep veggies crisp and reduce bitterness.
  3. Drain the zucchini and onions in a colander, rinse under cold water to remove excess salt, and set aside to drain fully.
  4. In a large pot, combine 2 cups granulated sugar, 2 cups apple cider vinegar, 2 tablespoons yellow mustard seeds, 1 tablespoon celery seeds, 1 teaspoon turmeric, 1/2 teaspoon ground black pepper, and 1/2 teaspoon ground ginger (if using). Stir well to combine.
  5. Heat the vinegar mixture over medium-high heat until sugar dissolves and the mixture reaches a gentle boil.
  6. Carefully add the drained zucchini and onions to the pot. Reduce heat to medium and simmer for 5 minutes, stirring occasionally. The veggies should soften slightly but remain crisp.
  7. Remove from heat and let the relish cool for 10 minutes.
  8. Spoon the relish into sterilized jars, leaving a little headspace.
  9. Seal the jars and refrigerate for at least 24 hours before eating to allow flavors to meld.

Notes

Soaking the sliced zucchini and onions in ice water with salt for 1 hour keeps the relish crunchy. Avoid overcooking the relish to prevent mushiness. Fresh apple cider vinegar is recommended for the best tangy flavor. Adjust sugar to taste if the relish is too tangy after chilling. For longer storage, process jars in a boiling water bath for 10 minutes.
