  • ½ teaspoon pure vanilla extract
  • Tiny pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, black cocoa powder (if using), baking soda, and salt for about 30 seconds until evenly distributed.
  3. Make a well in the center of the dry ingredients. Pour in the vegetable oil, white vinegar, and vanilla extract. Do not stir yet.
  4. Pour the hot water over the wet ingredients in the well.
  5. Whisk gently from the center, gradually incorporating the dry ingredients into the wet, until the batter is smooth and no streaks of flour remain. Do not overmix—about 20-30 seconds. The batter will be thin.
  6. Divide the batter evenly among the 12 liners, filling each about ⅔ full.
  7. Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should spring back when lightly touched. Start checking at 18 minutes.
  8. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely (at least 30 minutes).

The vinegar and baking soda reaction is crucial for the tender crumb—ensure baking soda is fresh. Hot water blooms the cocoa for deeper flavor. Do not overmix the batter.
