These no-bake peanut butter oat energy bites are the ultimate crowd-pleaser, made with simple pantry ingredients and ready in 20 minutes. Perfect for parties, potlucks, or a quick snack, they’re naturally sweet, satisfying, and completely customizable.

Ingredients

Scale
  • 2 cups (180g) rolled oats
  • 1 cup (240g) creamy peanut butter
  • 1/2 cup (120ml) honey
  • 1/2 cup (90g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add the rolled oats, ground flaxseed, and salt. Stir to distribute evenly.
  2. Add the wet ingredients: Spoon the peanut butter, honey, and vanilla extract into the bowl. Do not add chocolate chips yet.
  3. Mix until combined: Use a rubber spatula to fold the wet ingredients into the dry. Press the peanut butter mixture against the sides of the bowl to soften. Continue folding and pressing until no dry oats remain. The mixture should be thick, slightly sticky, and hold together when squeezed. If too dry, add a teaspoon of honey or water; if too wet, add a tablespoon of oats.
  4. Fold in the chocolate chips: Gently fold in the mini chocolate chips until evenly distributed.
  5. Chill the mixture: Cover the bowl with plastic wrap or a clean towel and refrigerate for 15-20 minutes to firm up the peanut butter.
  6. Roll into bites: Line a baking sheet or plate with parchment paper. Using a 1-tablespoon cookie scoop or a tablespoon, portion out the mixture and roll each portion between your palms to form a smooth ball. Place on the prepared baking sheet. You should get about 20-24 bites.
  7. Final chill: Refrigerate the baking sheet for at least 30 minutes (or 15 minutes if in a rush) to let the bites set completely before serving.

Notes

For best texture, use thick peanut butter (not overly runny). If using natural peanut butter with separated oil, stir well before measuring. For a vegan version, substitute honey with maple syrup (may need extra oats). For gluten-free, use certified gluten-free oats. Chilling the mixture before rolling is essential to prevent stickiness. Bites can be stored in an airtight container in the refrigerator for up to 2 weeks or frozen for up to 3 months.
