  • 1/2 cup mayonnaise
  • 2 cups shredded iceberg lettuce
  • 1 cup shredded Mexican blend cheese
  • 1 cup diced tomatoes, seeded
  • 1/2 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1/2 cup sour cream (for yard lines)
  • Tortilla chips, for serving

Instructions

  1. Prepare the Refried Beans: In a small bowl, combine the refried beans, 1/2 packet of taco seasoning, and 2 tablespoons of water. Stir until smooth and well combined. Set aside.
  2. Cook the Taco Meat: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through, about 6-8 minutes. Drain off any excess fat. Return the pan to the heat, add the remaining 1/2 packet of taco seasoning and 1/4 cup of water. Stir and let it simmer for 2-3 minutes until the liquid thickens slightly. Remove from heat and let it cool for a few minutes.
  3. Make the Creamy Layer: In a medium mixing bowl, combine the softened cream cheese, 1 cup of sour cream, and the mayonnaise. Stir until completely smooth and creamy.
  4. Assemble the First Layers: Spread the seasoned refried beans evenly across the bottom of your football-shaped platter. Use a spatula to create a smooth, even layer that follows the shape of the platter.
  5. Add the Cream Cheese Layer: Gently spread the cream cheese mixture over the refried bean layer. Be careful not to mix the two layers together. Spread it all the way to the edges, maintaining the football shape.
  6. Add the Taco Meat: Sprinkle the cooled taco meat evenly over the cream cheese layer. Press it down gently with your spatula so it adheres to the creamy layer.
  7. Add the Cheese and Lettuce: Sprinkle the shredded Mexican blend cheese over the meat. Then, cover the entire surface with the shredded lettuce.
  8. Create the Yard Lines: Place the remaining 1/2 cup of sour cream into a small piping bag or a resealable plastic bag. Snip a very small corner off the bag. Pipe straight lines across the width of the dip, spaced evenly apart.
  9. Add the Final Toppings: Sprinkle the diced tomatoes, sliced black olives, and chopped green onions over the ‘field,’ avoiding the yard lines if possible.
