  • 1/2 cup plain Greek yogurt or sour cream
  • 1/2 cup unsalted butter, melted (for coating)
  • 1/2 cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with paper liners or grease it well with butter or non-stick spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  4. Pour in the apple cider and Greek yogurt, and whisk until everything is combined. The mixture might look a little curdled—that is normal.
  5. Pour the dry ingredients into the wet mixture. Use a rubber spatula to fold everything together gently. Stir just until you no longer see streaks of flour. A few lumps are fine.
  6. Divide the batter evenly among the 12 muffin cups. Each cup should be about three-quarters full.
  7. Bake for 18 to 22 minutes. The muffins are done when a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should be golden and spring back when lightly touched.
  8. Let the muffins cool in the pan for about 5 minutes. After 5 minutes, transfer them to a cooling rack.
  9. While the muffins are cooling, melt the 1/2 cup of butter for the coating in a small bowl. In a separate shallow bowl, mix together the 1/2 cup granulated sugar and 2 teaspoons cinnamon.
  10. While the muffins are still warm (but not hot), dip the top of each muffin into the melted butter, then roll it in the cinnamon sugar mixture. Make sure to coat the sides too. Use your fingers to press the sugar onto the sides.
  11. Place the coated muffins back on the cooling rack for about 5 minutes. Serve warm or at room temperature.

Do not overmix the batter. Use room temperature ingredients. Check your baking powder and baking soda for freshness. The coating is essential—do not skip the butter dip. Let the muffins cool properly after coating for the sugar to set. For consistent muffins, use a cookie scoop.
