These beer cheese pretzel bites are soft, chewy, and filled with melted sharp cheddar and pale ale. Served with a tangy honey mustard dip, they’re the perfect snack for game days, movie nights, or any casual gathering.

Ingredients

  • 2 ¼ cups all-purpose flour (about 280g)
  • 1 ½ cups sharp cheddar cheese, shredded (about 170g)
  • ½ cup pale ale or lager (120ml)
  • ¼ cup buttermilk (60ml)
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Coarse sea salt or pretzel salt, for sprinkling
  • 6 cups water
  • ¼ cup baking soda (for bath)
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon mayonnaise
  • ½ teaspoon apple cider vinegar
  • Pinch of smoked paprika (optional)

Instructions

  1. In a large mixing bowl, whisk together the flour, baking soda, and salt. Add the shredded cheddar cheese and toss until evenly coated.
  2. Make a well in the center and pour in the beer, buttermilk, and 2 tablespoons of the melted butter. Stir with a wooden spoon until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead gently for about 2 minutes until smooth. Do not over-knead.
  4. Divide the dough into 4 equal portions. Roll each into a 12-inch long rope, about ¾ inch thick. Cut each rope into 1-inch pieces to make about 40-48 pretzel bites.
  5. Place the bites on a parchment-lined baking sheet.
  6. Preheat oven to 425°F (220°C). Bring 6 cups of water to a boil in a large pot. Carefully add ¼ cup baking soda; it will bubble vigorously.
  7. Working in batches of 8-10 bites, drop them into the boiling water and boil for 30 seconds. Use a slotted spoon to transfer back to the baking sheet.
  8. Space the boiled bites about 1 inch apart on the baking sheet. Sprinkle each with coarse sea salt or pretzel salt.
  9. Bake for 12-15 minutes until puffed and deeply golden brown. Rotate the sheet halfway through.
  10. Remove from oven and immediately brush with the remaining 1 tablespoon melted butter.
  11. While baking, whisk together Dijon mustard, honey, mayonnaise, apple cider vinegar, and smoked paprika in a small bowl. Adjust to taste.
  12. Let pretzel bites cool for about 5 minutes before serving with the mustard dip.

Notes

Don’t skip the baking soda bath—it creates the chewy pretzel crust. Shred your own cheese for best melting. Serve warm for optimal texture. Leftovers can be stored at room temperature for up to 2 days; reheat in a 350°F oven for 5 minutes.
