  • 2 cups all-purpose flour (240g)
  • ¾ cup granulated sugar (150g)
  • ½ cup unsalted butter, melted and cooled (113g)
  • 2 large eggs, room temperature
  • ¼ cup sour cream or plain yogurt (60g)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup walnuts, chopped (120g)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line with parchment paper, leaving overhang on sides.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth with a few small lumps (about 1 ½ cups).
  3. Add melted butter, granulated sugar, eggs, sour cream (or yogurt), and vanilla extract to the mashed bananas. Whisk together until well combined and smooth.
  4. In a separate small bowl, whisk together flour, baking soda, and salt.
  5. Pour dry ingredients into wet ingredients. Using a rubber spatula or wooden spoon, gently fold together until just combined (do not overmix; a few lumps are fine).
  6. Gently fold in chopped walnuts until evenly distributed. Reserve a handful for topping.
  7. Pour batter into prepared loaf pan and spread evenly. Sprinkle reserved walnuts on top.
  8. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If top browns too quickly, tent loosely with foil after 40 minutes.
  9. Cool in pan on a wire rack for 15 minutes, then lift out using parchment paper and cool completely on rack before slicing.
